7 months ago we brought in the first grapes.
#Chardonnay in pole position for the sparkling wine, #Vermentino 3 weeks later for the Perséis vintage and the last reds another 3 weeks after…
And there you have it… at the end, the bottling, a great moment of happiness, of relief.
You know (almost) everything about these 4 vintages which I hope you will enjoy.
Since September, the grapes have become must, then fermented, turned into wine and stabilized over the winter.
Since the harvest, the work in the cellar aims to bring it to the right moment when it can be considered "ready".
Just a few weeks ago, the whites were being refined in contact with the lees, nourishing the wine.
But there comes a time when you have to know how to freeze things and put them in bottles.
As proof, there is one vintage missing from the call... right? The Father's vintage is patiently waiting in barrels. I'll tell you more when it's ready! (probably for #Christmas)

Today is the last day of the #kisskissbankbank campaign! Thank you all for your support and trust.
One last step: no tin or aluminum capsules here... we'll have to reopen the boxes and wax each of these bottles by hand.
After which we can start deliveries.
